If you do not know the carbohydrate content of food, your first task is to study it and avoid foods rich in carbohydrates – bread, pasta, potatoes, sugars of any kind. Carbohydrates are metabolized like sugars – just like simple sugars, like those found in a juice. Your body uses sugars and carbohydrates as a source of fuel, rather than burning the fat you carry. If you deprive your body of its basic fuel – sugar – it will have no choice but to burn fat. You push your body into the fat burning mode (ketosis) when you don’t give it sugar to burn. Ideally, you will stay in this fat burning mode for weeks and months as you lose weight. I’ve been in ketosis for months, as far as I know. I don’t eat anything that could get rid of me. If I fell out of the cart and ate too many carbs, I would get back on the cart right away, but the transition back to ketosis can take a few days and I don’t want to give up those fat burning days to eat a slice of bread. With all the pounds I’ve lost, it’s just not worth it.

Vegetables are my tools of survival. My favorite home is to eat a huge cabbage salad in my one-hour window. I use a huge stainless steel bowl for the slaw itself. The bowl is probably 8 cups in size – very large. I fill it with cabbage and a homemade dressing (yogurt, mayonnaise, vinegar, stevia, salt, pepper) and eat everything. Usually, I will have some kind of protein – salmon, meatballs, steak, sardines, eggs. That’s what I eat. Cabbage salad is very healthy and can be digested for hours. In fact, I feel fuller than I have ever felt in my life after eating such a meal. I feel satisfied and have energy. It works well for me and it’s worth a try.

I also make generous use of salads based on Roman salads, usually topped with olive oil and vinegar and topped with red onions and something resembling a tuna salad (or canned salmon or sardines). Tuna / salmon / sardine salad usually has a little mayonnaise, salt and pepper. It is very basic.
