How to make candied pecans in the oven?

The best way to make candied nuts – nuts covered with a sweet, crunchy layer – is to use an oven. Although stove recipes are great, they never reach the same level of crunchiness and you will not have a thick and crunchy layer. You need 5 simple ingredients to make these candied pecan pralines:

  • Egg white – you must use eggs for the recipe for pecans baked in the oven. You can only make this recipe without eggs if you cook the nuts on the stove.
  • The water
  • Vanilla extract
  • Erythritol – do not use xylitol. It does not harden or tighten like erythritol. I recommend brands made from pure erythritol (such as Swerve) or a combination of Monk fruit and erythritol.   • Cinnamon – or pumpkin spices.
  • Sea salt

Walnut preparation

The first step in making candied pecans in the oven is to cover each walnut with a layer of egg white and water mixture. In fact, this mixture helps the sugar mixture, consisting of keto sweetener without sugar and spices, to stick to the nuts in the next step. In addition, the egg whites are crunchy and create a thick layer of candy around the nuts, which makes them even more delicious.

Then I recommend that you always bake the nuts at low temperatures to keep them nutritious. This means that the best oven temperature for baking pecans is 250F (130C).

In addition, keto candied pecans use Monk fruit or erythritol. These sugar-free sweeteners have a lower melting point than sugar.

In fact, the mixtures of erythritol or erythritol in monk fruit melt at 120C, while the sugar melts at 180C.

Therefore, to prevent the sugar-free sweetener from turning brown, it is best to break down the pecans at a low temperature.

How to store candied pecans?

These keto pecan pralines should be kept in an airtight container, preferably a metal or glass container. In fact, plastic containers soften the nuts and they won’t keep that long. Store the container at room temperature and store for up to 3 weeks. You can also freeze the nuts and thaw them 1 hour before at room temperature.

Comparison: stove option vs. oven option

Both methods are great, but they offer very different results in terms of taste, texture and storage. Choose the recipe that works best for you. My preference is the oven version.

Baked pecans have:

  • a layer of very crunchy sugar and nuts – they taste like praline candy.
  • a thick, white, matte layer of crystallized sugar.
  • keeps its crunch for up to 3 weeks.
  • take at least 1 hour to prepare – including cooling.

  • look bright, sweet, lovely, but not very crunchy.
  • it lasts for up to 3 weeks, but the nuts soften after a few days.
  • ready in less than 30 minutes.

So if you like crispy praline candies, use the oven option. But if you prefer a slightly crunchy walnut or are allergic to eggs or vegan, use the stove option.

Vegan pecan candy option

The original recipe for candied pecans above is not vegan, as it uses egg white. However, there is another way to make candied nuts without eggs under the stove.

This is not my favorite option because nuts will not rotate as much, and the layer will be a thin and shiny caramel rather than a crunchy layer of candy.

But because many of you are allergic to eggs or on a vegan keto diet, I’m sharing this vegan keto recipe with you in this post.

Keto vegan candied pecans

Stove method

In a large non-stick pan over medium-high heat, add the crystal sweetener without sugar and water. Stir constantly until the erythritol melts and the liquid forms many bubbles in the center of the pan. If you have a candy thermometer at home, you want to get to 320F-340F (160C-180C).

This is the temperature at which the sugar-free caramel is formed. Then pour the pecans into the hot caramel along with the cinnamon and sea salt. Reduce heat to low and stir in pecans to cover.

Transfer the pecans covered on a large baking tray or a plate covered with baking paper. Spread with a spatula in a single layer and cool completely. The layer of caramel around the walnuts will become crispy after 30 minutes.

This method creates groups of pecans, with a thin layer of caramel between them. You can simply separate them to release the individually candied nuts or serve them as a pile.
