How is quiche keto made?

It’s very easy to make a keto keto crust and it doesn’t take long to make just a regular quiche crust. I’d even say it’s easier to make because you don’t have to roll the dough!

In fact, most quiche keto crusts are also known as pressed crust. It means that you press the dough into the quiche tray to cover it instead of rolling the dough.

There are two ways to make a quiche crust that is very low in carbohydrates. For a buttery, flaky quiche crust, I recommend using only almond flour and therefore making an almond flour quiche crust – this is definitely my favorite option.

For a crunchy (not flaky!) Crust with a little less carbs, more fiber and nutrients, you can replace some of the almond flour with a flaxseed meal. Let me explain.

1. Pie crust with almond flour

This is by far my favorite keto crust for a quiche for several reasons. It is buttery, flaky, and the color is very similar to that of ordinary coffee-style quiche, which makes it nice to serve at brunch with friends.

They will love this crust and will not even notice that it is the keto and gluten free version.

  • Almond flour – use ultra-fine, bleached for best results, without almond flour.

2. Almond flaxseed flour crust

It is a very similar recipe to the one above, except that you will only use 1 1/2 cup of almond flour in the recipe and you will add 1/2 cup of flaxseed flour. This recipe also works better if you change the butter to coconut oil or it becomes greasy.

The purpose of using some of the flaxseed meal in your crust is to:

  • reduces carbohydrates in crust at 1 gram per serving – we’re all looking for less carbs on the plate, so it matters.
  • increases fiber and nutrients
  • create a crunchy, not flaky crust
  • a darker rustic color


So don’t forget, to make this version, use only 2 cups of almond flour and add 1/2 cup of flaxseed flour. The rest of the ingredients and methods remain unchanged.

Can I use coconut flour to make a quiche?

I do not recommend coconut flour to make a quiche crust. Coconut flour has a sweet aroma that does not go well with a tasty quiche. However, this is my point and we all have different taste buds and food allergies.

Which option should I choose?

Both almond flour pie crusts are very different in color and texture. If you like a golden, flaky butter crust, choose the almond flour recipe.

Otherwise, if you like crusty, crunchy, and you’re looking for a little less carbs and you don’t mind the brown color of flaxseed flour, choose almond flaxseed crust. This quiche crust will be very different in color and texture.

No tools needed: a trouble-free crust recipe

You don’t need a food processor or a pin to make this low-carb quiche crust, just bring all the ingredients into a bowl and mix until a dough forms.

Press the dough over a quiche pan greased with butter to cover it evenly. It’s just as simple and only takes 10 minutes. My only advice is to use egg and butter at room temperature.

How to make quiche crust?

It is very simple to work with this keto dough. Think of it as a playdo game for kids.

Place the ball of dough in the center of a greased quiche tray and first press with your palm to stretch as much as possible. Then gather the pieces and fill the holes until the whole tray is covered with dough. Smooth the dough using a spatula.

After pressing the dough into the pan, it is important to use a fork to prick the crust all over. This prevents the crust from swelling and breaking in the center during baking.

Also refrigerate the pan for 10 minutes before baking. This will prevent the crust from releasing too much butter and becoming too greasy and brittle.

Bake in advance and fill

This quiche crust with almond flour needs 7-9 minutes before baking at 7-8 minutes at 350F (180C). Then add your favorite quiche filling and bake according to the recipe instructions below.


Can I do it before or can I freeze my crust?

Yes, you can make this queto keto crust beforehand and put it in the fridge for up to 48 hours before making a quiche. There are two options for refrigerating this quiche crust with almond flour:

  1. The best option is to press the dough into the quiche tray and refrigerate the entire tray covered with a piece of plastic wrap to prevent the tip of the crust from drying out. When you are ready to prepare your quiche, take the quiche crust out of the oven, bake for 7 minutes at 350F (180C) and follow my keto quiche recipe for the filling.
  2. Wrap the ball of dough in a piece of plastic wrap and refrigerate. This option is not my favorite simply because the dough hardens and is harder to press into the tray. However, it is a convenient option if you do not have enough space in the refrigerator to store the quiche tray. But I will recommend that you take the dough out of the fridge 1 hour before pressing in the tray to make it easier.

Freeze the crust

Of course, you can freeze this quiche crust and you don’t have to bake the crust beforehand to do this. Simply freeze the lightly flattened ball of dough into a disk, wrap it in plastic wrap and place in a tight container.

This double seals the dough and prevents moisture from entering. Thaw the day before, unwrap the dough, place it on a plate and leave it at room temperature.
